Purple corn has long been revered by the indigenous people of Peru as a staple superfood traditionally used in the daily diet, for medicinal purposes and in the rejuvenating tonic known as Chicha Morada. Originating from the heirloom Kculli variety of Zea mays, still cultivated in Peru, it is one of the richest sources of anthocyanins found in nature. These antioxidant flavonoids give purple corn its striking deep purple pigment. Most Purple Corn powders are ground up Purple Corn kernels. While the kernels do contain an anthocyanin rich “skin” covering the fleshy kernel, the kernel itself is predominantly starch. The cob on the other hand contains the highest amount of anthocyanin rich pigments. Powders made from the kernels are essentially a starchy purple corn meal. Natural Traditions Purple Corn Concentrate is made through a proprietary process that mechanically removes the anthocyanin rich pigments from the cob without heat or solvents. This proprietary cold, hammer-mill process separates the anthocyanins from the cob of the corn, yielding the highest concentration of anthocyanins possible without the starch commonly found in the kernel. The final product is a concentration of the pigments with no starch, fillers, flavors, binders, maltodextrin or sweeteners added, just pure Purple Corn Pigments.
