Dark Chocolate Coconut Cookies (Vegan + Gluten Free)
Need to bring a plate to a cosy Christmas dinner? Or maybe you’re after a ‘stocking stuffer’ item that doesn’t involve overloading your loved ones with sugar. Give these Christmas Cookies a whirl. Made with creamy coconut milk, hints of vanilla and nutritious flaxseed, you’ll become everyone’s favourite baker in less than 30 minutes.
130gr Organic Refined Coconut Oil
250 ml Agave Nectar
10 ml Vanilla Extract
150 gr Coconut Milk
50 gr Shredded Unsweetened Coconut
260 gr Gluten Free Flour Blend (Cup 4 Cup Brand)

In a mixer, combine coconut oil and agave with vanilla and combine. Add in the coconut milk in a steady stream. Sift together dry ingredients and slowly incorporate into wet ingredients.
