Dark Chocolate Coconut Cookies (Vegan + Gluten Free)
Need to bring a plate to a cosy Christmas dinner? Or maybe you’re after a ‘stocking stuffer’ item that doesn’t involve overloading your loved ones with sugar. Give these Christmas Cookies a whirl. Made with creamy coconut milk, hints of vanilla and nutritious flaxseed, you’ll become everyone’s favourite baker in less than 30 minutes.
Ingredients
130gr Organic Refined Coconut Oil
250 ml Agave Nectar
10 ml Vanilla Extract
150 gr Coconut Milk
50 gr Shredded Unsweetened Coconut
260 gr Gluten Free Flour Blend (Cup 4 Cup Brand)
230 gr 70% Dark Chocolate Chunks or Nakid Vegan Chocolate
5 gr Baking Soda
Method
In a mixer, combine coconut oil and agave with vanilla and combine. Add in the coconut milk in a steady stream. Sift together dry ingredients and slowly incorporate into wet ingredients. Fold in flax seeds, mix until just incorporated. If the mixture is too wet, add in more flour slowly until dough forms.
Bake at 325F for 15-20 minutes, until just and set. Let cool fully before enjoying.
Chocolate Peppermint Mousse (Vegan + Gluten Free)
Been lumped with dessert duty, but fresh out of ideas? Or need to impress your guests, but super strapped for time? Try whipping up this quick crowd-pleaser with a festive twist. There’s no baking required - and the best part is getting creative with your toppings. Bon appetit.
Ingredients
Yield: 6 Servings
800 gr Avocado
280 gr Agave Nectar
100 ml Organic Refined Coconut Oil
100 ml Unsweetened Almond Milk
10 ml Natural Peppermint Extract (optional)
5 gr Vanilla Extract
Method
Combine all ingredients into a Vitamix blender or food processor. Blend on high power until fully incorporated, light and airy. Place into cups or bowls and refrigerate to set.

Dried Fruits, Berries, Goji Berries etc
