    Cacao beans are the beginnings of all chocolate products and Mum’s Original™ cacao powder is our ‘finest’ member of our Criollo Arriba cacao product line. Cacao powder is simply the result of the cacao bean being put through a cold-pressing process with the fat (cacao butter) mostly removed. Rich in numerous nutrients, and anti-oxidants galore, our finely milled powder is a chocolate lover’s dream.   Mum's Original™ uses the specific heirloom variety Criollo Aribba for its cacao beans. As the original source of all cacao, Criollo Arriba has the richest flavor and greatest nutritional composition. Combined with our traditional style of processing, our well-fermented Criollo results in an incredible taste profile with lots of delicate high notes with a tangy berry note integrated into a delicate chocolate flavor.   We use natural and traditional growing practices with all of our cacao grown without use of any pesticides, fertilizers or herbicides. Our cacao pods are hand selected then carefully fermented in the sun for almost 2 weeks to alleviate the natural bitterness and to remove the naturally occurring phytic acid (which if not properly fermented will prevent the absorption of its minerals). We then carefully process the beans at low temperatures in order to ensure maximum retention of nutrient value. The beans are extracted from the cacao pods and are then cleansed, peeled and the beans are cut into small pieces or "nibs." They are then gently pressed to remove most of the cacao butter (fat) and are then milled at low speeds to create the fine powder. We do not add any potassium washes (dutch chocolate-done to reduce acidity and also making it dark in color) nor do we heat any of the beans electronically. Many cacao processing introduces an alkalinizing process used to reduce the acidity of chocolates - this substantially lowers the quantity of the anti-oxidants. We are proud to use artesian processing every step of the way, with no alkalizing processes used in order to maximize the nutritional compounds that are naturally occurring.     Cacao is the bean that chocolate is made from. In its raw state, it contains more antioxidant flavonoids than red wine, green tea and blueberries. These cacao beans are guaranteed to be free of heavy metals, chemicals and pesticides. They are USDA certified organic. They are imported from Peru and Equador and packed by Wilderness Family Naturals in the USA. The cacao powder is created by cold-pressing raw, organic cacao beans into a pressed cake separating the oil from the protein and fiber. The temperature is never allowed to exceed 120° F and is usually 104° F (all other cocoa powders are exposed to temperatures as high as 300° F!). A high-accuracy thermometer monitors the process. The remaining dry 'cake-like' material is then cold-ground and fine-milled so that only the finest raw cacao particles become the finished product. This raw cacao powder has antioxidant activity as exhibited by an ORAC score of 1377 μmol TE/g and is an excellent source of magnesium (42% DV) and iron (22% DV).
